Nothing says celebration so much as a glass of bubbly. And especially with patio season nearly upon us, sipping one with a great Vancouver view before you is simply unbeatable.

Up until recently in the city, bubbly by the glass was fairly limited in selection. However, with technological innovations and establishments willing to revamp their wine lists, a wide selection of bubbly by the glass is now a reality. Provence Marinaside, for example, is launching a new bubbly program this month, making the celebratory an everyday possibility, whether you’re on a solo date, with a plus one, or a with a group of friends.

Provence Marinaside (1177 Marinaside Crescent) and next door twb (The Wine Bar) (1167 Marinaside Crescent) are now offering 24 bubbles by the glass. Previously, this wasn’t possible since a popped bottle would quickly lose its essential effervescence and become flat.

The change is due to the introduction of Le Verre de Vin preservation system, a fancy contraption that basically replaces the CO2 in the bottle, maintaining the pressure and causing no degradation or alteration in the taste and bubble structure. Provence can now keep a bottle up to 21 days after it’s been first opened. The things they can do these days…

The new list ranges in price from $8 for a glass of Montelvini Prosecco, to $110 for a glass of Louis Roederer Christal 2009 champagne. Eleven of the twenty-four by glass options are champagne (eg Ruinart Brut Rose $65; Chateau de Bligny Blanc de Blanc $45), the rest being sparkling wines from other regions, such as Blue Mountain Gold Label Brut ($14) from the Okanagan, Mas Fi Cava ($10), and LaMarca Prosecco ($11).

If you’re feeling like splurging a bit or quite a bit more, you can also order bottles of bubbly at different price points (eg Billecart Salmon Blanc de Blancs $300; Taittinger Collection Brut 2008 $999).

Pair your bubbly by the glass with a patio seat overlooking Vancouver’s False Creek and the seawall and you’ve got a truly relaxing combination. Take a stroll afterwards and enjoy the view.
